Our chickens are Dominique
and are free to roam about their run.
Since we live in a forest with many preditors,
we can't give them free roam of the forest.
Our eggs are collected daily
and refrigerated as soon as they lay a dozen.
The eggs are *NOT* washed.
That would remove the protective coating left by the hen.
This means they must be washed well
before use to remove any dirt grime and such.
Once washed the protective layer is also removed
and the shell is now permeable.
